Sue’s Spinach Cheese Puff

Makes 6 servings.

Ingredients:
  • 1 tbsp butter or soft spread, melted
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • ½ red bell pepper, diced
  • 8 ounces farmers cheese (dry curd cottage cheese)
  • ¼ tsp salt, if desired
  • ¼ tsp black pepper
  • 10 ounces baby spinach, chopped
  • 3 eggs
  • paprika, to taste
  • grated reduced fat cheddar cheese, for garnish
Directions:
  1. Preheat the oven to 350 degrees F.  Butter a 9-inch square baking dish.
  2. Melt the butter over medium heat in a stovetop pan, add the garlic, onion, and red bell pepper. Sauté until tender (for 5 to 10 minutes), set aside.
  3. In a mixing bowl, beat together the farmer’s cheese, salt, and black pepper until fluffy. Stir in the chopped spinach, eggs, and the cooked stovetop mixture. Blend all ingredients until combined.
  4. Pour into the baking dish. Sprinkle the top with paprika.
  5. Bake for 30 to 40 minutes, or until golden brown at the edges. Sprinkle the top with cheddar cheese right before you remove it from the oven. Allow the cheese to melt for another minute.
