Balsamic-Roasted Onions

Serves about 2-4

Amazing addition to any breakfast, lunch and dinner. The recipe doubles easily, you’ll be glad you made extra.

Ingredients:

  • 4 large red onions
  • 1-2 tablespoons olive oil
  • 1/3 cup balsamic vinegar
  • ½ teaspoon sea salt

Directions:

  1. Preheat oven to 450 degrees.
  2. Peel onions and cut through the root end into 8 wedges
  3. Place in 9-by-13-ince baking dish and toss with olive oil
  4. Pour vinegar over onions and sprinkle with salt
  5. Cover with foil; bake until almost tender, 45 minutes.
  6. Uncover and cook until soft and caramelized, 5 to 10 minutes more.
