Mango Salsa

Yields 4 to 6 servings


  • 2 ripe mangoes, peeled and diced
  • 1 serrano chile, finely chopped
  • 2 spring onions (scallions)finely chopped
  • ½ red pepper, finely chopped
  • ½ yellow pepper, finely chopped
  • 1 cup fresh cilantro, finely chopped
  • 1 lime, juiced, or more to taste


  1. Place the mango pieces in a bowl.  Add in the chopped chile, spring onions, and red and yellow bell peppers.
  2. Mix in the cilantro and lime juice. Add more lime juice if necessary.  Allow to sit in the refrigerator 1 hour before serving.
