Spiced Oatmeal Pumpkin Pudding

2 servings

  • ¾ cup unsweetened soy milk
  • ¼ cup canned pumpkin
  • 1 egg white, or 1 whole egg
  • 3 tbsp honey -- local is best
  • ¼ tsp pure vanilla extract
  • 1 tsp canola oil 
  • ¾ cup rolled oats
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • dash ground cloves
  1. Preheat oven to 350 degrees.
  2. Grease a 2-cup casserole dish with canola oil.
  3. In a small bowl, combine the soy milk, pumpkin, egg white, honey, vanilla extract, and canola oil. 
  4. In a medium bowl, combine the oats, salt, cinnamon, nutmeg, and cloves. 
  5. Add the wet ingredients to the dry ingredients, and stir well. 
  6. Pour into the casserole dish.  Bake about 35 minutes, or until the center of the pudding is firm.
