Trader Joe’s Cauliflower Gnocchi with Cherry Tomatoes, Feta Cheese, and Spinach

Yield: 2 servings


  • 1 bag of Trader Joe’s cauliflower gnocchi
  • 1 tablespoon olive oil
  • 2 tablespoons minced garlic
  • 10-12 cherry tomatoes, slice in half lengthwise
  • 3 cups baby spinach
  • 2 tablespoons feta cheese
  • Pepper, to taste


  1. Prepare cauliflower gnocchi on stove top according to package instructions
  2. Once gnocchi are toasted, add 2 tablespoons of minced garlic and season with pepper
  3. Toss in cherry tomatoes and stir for 1-2 minutes
  4. Toss in spinach and wilt for 2-3 minutes
  5. Toss in feta cheese and stir for 1-2 minutes
  6. Split into two servings—plate one and pack one into a reusable Tupperware container
