Vegetable Omelet with Feta Cheese

Yield: 1 serving


  • 1/2 cup bell pepper diced
  • 1/2 cup onion diced
  • 2 eggs
  • 2 tablespoons feta cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste


  1. Crack two eggs into a bowl and beat until no more yolk streaks are present
  2. Heat 1 tablespoon of olive oil in a small pan on medium heat
  3. Toss bell pepper and onion into pan
  4. Season with salt and pepper for taste
  5. Sauté until bell pepper and onion are soft
  6. Pour beaten eggs into the pan
  7. Swirl pan so that egg forms uniform layer over bell pepper and onions
  8. Using a pan lid, cover and steam eggs on medium heat for about 2-3 minutes
  9. Sprinkle feta cheese over omelet
  10. Slide out of pan, fold over, and serve
