Peach Cobbler

Prep Time: 25 minutes Bake Time: 25 minutes Makes: 8-10 servings

Ingredients:
For filling- 4 cups fresh peeled and sliced peaches
¼ cup raw local honey
1 teaspoon ground cinnamon
For cobbler- 1 cup almond flour
1 cup gluten-free old fashioned oats
¼ cup raw local honey
¼ cup coconut oil, slightly melted
1 teaspoon cinnamon
Pinch of salt
¼ cup unsweetened non-dairy milk
1 egg or flaxseed egg (1 tablespoon ground flaxseed + 5 tablespoons warm water, stir. Let sit for ~3 minutes)

Directions:
1. Combine peaches, honey and cinnamon in an 8X8 baking pan. If using a larger pan, you may want to double the recipe.
2. Combine almond flour, oats, cinnamon, and salt in a medium mixing bowl and set aside
3. Combine honey, oil, and egg of choice in a large mixing bowl.
4. Add dry ingredients to the honey-egg mixture. Stir in the milk.
5. Crumble the cobbler on top of the peaches, leaving spaces for the peaches to show through.
6. Bake for ~25 minutes or until the cobbler becomes golden brown and the peaches are bubbling.
