Spinach Kale Souffle

Spinach Kale Soufflé


5 oz. container of fresh Baby Spinach, chopped

1 bunch Kale, finely chopped

1 medium red Onion, chopped

6 cloves Garlic, minced

16 oz. container of Cultured Cottage Cheese

1 cup Aged White Cheddar Cheese, grated

6 large Eggs

1 Teaspoon Black Pepper

1 Tablespoon Extra Virgin Olive Oil

Salt, to taste


  1. Preheat oven to 350°
  2. Sauté onions and garlic, until tender.
  3. Add greens and sauté until soft.
  4. Mix eggs, cheese, and seasoning.
  5. Add onion, garlic, and greens mixture to eggs and pour into baking dish.
  6. Bake for 40-45 minutes.
