Tomato & Basil Oats
¾ cup tomato puree
1 ¼ cup unsweetened almond milk
1 ½ cup whole, or steel cut oats
2 tablespoons Extra Virgin Olive Oil
¼ cup Fresh Basil, finely chopped
1 garlic clove
Salt and pepper to taste
2 Tbsp Parmesan cheese, grated
- In a pot, add olive oil and sauté garlic on low medium heat. After garlic has a little color, add liquid. Bring milk and tomato puree to a boil, add oats, and basil. Reduce heat to low.
- Once most of the liquid has absorbed, about 60 minutes, top with cheese and serve.
