Chilean Fruit Salsa

Yields 4 to 6 servings

Ingredients:
  • 2 nectarines
  • 1 pear
  • 2 apricots
  • 1 kiwi
  • 1 Anaheim chile
  • ½ cup chopped spring onion (scallions)
  • 1 ripe avocado
  • ½ cup fresh cilantro, chopped
  • ½ lime, juiced
Directions:
  1. Cut and de-seed the nectarines, pear, and apricots, and chop into small pieces. Peel the kiwi and do the same. Place all the fruit in a bowl. 
  2. De-seed the chile and chop into very fine pieces.  Add the chile and the onion to the fruit bowl.
  3. Cut the avocado in half, scoop out the flesh, and add to the mixture. Mix in the chopped cilantro and juice. 
  4. Toss all the ingredients together until they are thoroughly mixed. Serve immediately.
