All-Purpose Mayonnaise

(makes 1 cup)

2 garlic cloves, quartered and minced
8 oz. soft-calcium enriched tofu
1 tbsp. Dijon mustard
1 tsp. apple cider vinegar
Salt to taste

Blend together in food processor and serve.
