Serves 4 

• 1 lb spinach leaves 
• 2 cloves garlic 
• 1 tsp olive oil 
• Black pepper 
• Red wine vinegar 

Saute’ minced garlic in olive oil. Add 1 lb of just-washed fresh spinach leaves. Stir well, cover, lower heat, and cook for a few minutes, until spinach wilts. Just before it’s done, add freshly ground black pepper to taste and a tablespoon of red wine vinegar.
