David's Fruit ~Apple Cake

2 Cup whole wheat pastry flour 
2 Cup unbleached, unbromated white flour 
2 tsp. cinnamon 
2 tsp baking soda 
2 tsp baking powder 
6 tsp. Egg Replacer (powder) 
1 tsp. salt 
1 Cup organic whole sugar 
2 Cup walnuts – chopped or not 
4 Cup frozen fruit 
1 banana cut up 
Wet Ingredients 
½ Cup Olive Oil 
1/2 Cup maple syrup 
1 lb. Nasoya Silken Tofu 
1 T Vanilla 

Thaw the fruit in microwave before using (or let sit out till thawed). Mix dry ingredients. Mix wet ingredients in food processor. Add wet ingredients to dry and mix well. Use non-stick bunt pan or angel food cake pan but, do oil the sides and bottom of pan. Bake at 350 for 60 minutes. Do not under bake or cake will fall. 

Fruit variations may be used. This recipe was originally all apples. It has been made with fresh apples, pears, and bananas, and combinations of those fruits with thawed kiwi, peaches, melons, and grapes. This recipe may also be halved, and baked in a 5"W x 9"L x 3"D Loaf Pan. What ever version of pan is used, it is necessary to check cake with a wood or metal skewer to assure the inside is cooked completely before removing from oven. 


Makes 16 servings. Per serving: 386 calories, 17g fat, 2g sat fat, 4.5g fiber, 8.3g protein.
