Corny Pancakes

Makes 8 servings

1 cup unbleached flour
1 cup whole wheat flour
½ cup cornmeal
2 tbs. arrowroot
2 tsp. baking powder
½ tsp. baking soda
½ tsp. cinnamon
1/8 cup canola oil
2 cups soy milk or rice milk
1/8 cup maple syrup or brown rice syrup
¼ tsp. cider vinegar

Blend all ingredients together in mixer or blender. Ladle onto hot skillet sprayed with nonstick spray. Cook to your liking.

Per serving(113g): 229 calories, 5g fat, 0.5g sat fat, 3.5g fiber, 40g carbohydrate, 6.5g protein.
