Diabetic Recipe: Baked Rutabaga Fries


Makes 8 servings 


  • 2 medium sized rutabagas  

  • ¼ cup olive oil

  • Salt and pepper to taste


Preheat oven to 400 degrees F.

Peel and cut the rutabaga to desired thickness, no more than ¼ inch wide.

a large bowl, toss the rutabaga slices in the oil.

Place them, evenly spaced, on a non-stick surface or baking sheet.

Bake for 40 minutes or until crispy on the outside, but cooked and soft on the inside.
