Diabetic Recipe: Chicken Avocado Burger

Recipe makes 4 burger patties


  • 1 lb. ground chicken.  97/3 is ideal because a little fat keeps them from getting too dry.
  • 1 large ripe but firm avocado
  • 1 egg or ¼ cup of egg substitute
  • ⅓ cup of Panko crumbs
  • 1 minced jalapeño pepper (optional)
  • ¼ teaspoon of pepper
  • ½ teaspoon of salt 


1. Cut the avocado into chunked cubes. 

2. Put all ingredients, except the avocado chunks, into a large bowl and mix together. 

3. Add in the avocado and create four evenly sized patties. Try not to mush the avocado.  

3. Grill for about four minutes on each side over medium heat. Overcooked burgers will become dry.
