Sautéed Zucchini (or summer squash) with Parmesan

Serves 4


  • 1 tablespoon Olive oil
  • 2 pounds zucchini (about 4 medium) or summer squash
  • 1/8 teaspoon Salt
  • Freshly ground pepper to taste
  • ½ cup Parmesan cheese (1 ounce) finely shredded


  1. Slice zucchini into ¼ inch thick slices.
  2. Heat oil in a large non-stick skillet over medium heat.
  3. Add zucchini and cook, stirring every 2-3 minutes, until tender and slices are golden brown (25 minutes).
  4. Reduce heat, sprinkle with salt and pepper.
  5. Sprinkle with cheese, cover and cook for 2 minutes.
  6. Cut into wedges and serve warm.
