Soft Baked Banana Power Bars

Ingredients:
  • 2 large ripe bananas mashed with a fork
  • 2 cups uncooked oats
  • 1/2 cup unsweetened, non-dairy milk (almond, soy, coconut)
  • 1 egg (or 1/4 cup unsweetened applesauce)
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons honey – local is best  
  • pinch of salt
  • choose 1 to 2 cups of chopped nuts and dried fruit of your choice
Directions:
  1. Preheat oven to 375 degrees. Combine all ingredients in a bowl and mix well.
  2. Place "batter" on greased cookie sheet, pat down and form them into rough bars until they are somewhat flat.
  3. Bake for about 20 to 30 minutes, depending on whether you would like soft or crispy bars.
