Focaccia Bread

Ingredients for Bread:
  • 2 cups almond flour
  • 7 ounces dry curd cottage cheese (farmer’s cheese)
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon coarse black pepper (as tolerated)
  • ½ cup grated reduced-fat aged cheddar cheese
  • 3 eggs
  • 3 tablespoons extra virgin olive oil
  • 2 scallion sprigs, finely sliced
Ingredients for Topping: 
  • 1 tablespoon finely grated reduced-fat cheddar cheese
  • 1 teaspoon dried rosemary 
  1. Preheat the oven to 375 F.
  2. Grease a 9 by 13 inch baking dish.
  3. To make the bread, mix together the bread ingredients in a food processor until well blended. Remove from the blender and spread out in the greased baking dish.
  4. To make the topping, combine the topping ingredients and mix well. 
  5. Sprinkle the topping over the bread. Place in the oven and bake until the edges brown, 30 to 40 minutes.  Allow to cool and then cut into sandwich squares.

Yields approximately 20 squares, depending upon size


Watch the oven carefully, the bread might cook faster than the anticipated time; check it after 20 minutes.
