Adzuki Oat Groat Sweet Potato Patties

Prep Time: 30 minutes    Cook Time: 10-15 minutes    Makes: 12 small patties
 
Ingredients:
½ cup cooked oat groats
½ cup cooked or canned Aduki beans
¼ large Japanese sweet potato, cubed (or regular sweet potato)
1 tablespoon ground flaxseed
1 teaspoon coriander
½ teaspoon paprika
1 ½ teaspoons cumin
Salt and pepper to taste
 
Cumin Coriander Yogurt Sauce
Ingredients:
 
1 cup plain Greek yogurt
1-2 teaspoons cumin
½ teaspoon coriander
 
Directions:
1. Cook oat groats- ½ cup groats in 2 cups water in a small sauce pot for ~20 minutes or until groats are tender but chewy. Set aside.
2. If using dry Aduki beans, cook ½ cup beans to 2 cups water in a small sauce pot over medium heat. Bring to a boil. Reduce heat and simmer for ~25-30 minutes or until tender. Set aside.
3. Micro-steam sweet potato- Place in a microwave safe bowl. Add 2-3 tablespoons water and cover with a damp paper towel. Microwave for 3 minutes or until tender enough to mash.
4. Mash together groats, beans, and sweet potatoes. Mash in spices and flaxseed, salt, and pepper to taste.
5. Form small 2” patties that are about ½” thick (so they stay together in the pan). Heat oil in a pan. Add patties and cook for ~5 minutes or until golden brown. Flip patties and cook for another 5 minutes or until golden brown. Serve with yogurt sauce.
