Peanut Butter Banana Chocolate Chip Cookies

1.5 cup Oat Flour
1/2 cup all-natural creamy Peanut Butter (unsweetened)
1 large Egg
2 Tablespoons Honey
2.5 medium ripe Bananas, mashed
1/2 Teaspoon Cinnamon
1/2 Teaspoon Baking Soda
1/2 cup unsweetened Chocolate Chips
2 Tablespoons Coconut Oil, melted
1 Teaspoon pure Vanilla Extract

1. Preheat oven to 350°F.
2. Pulse steel-cut oats in blender until flour consistency.
3. In a large bowl, mash bananas with a fork. Whisk in egg.
4. Add peanut butter, coconut oil, vanilla extract, cinnamon, and honey.
5. Mix in oat flour and baking soda to wet ingredients.
6. Fold in chocolate chips.
7. Scoop out cookies onto a pre-greased baking sheet. Bake for approximately 12 minutes.
