Nilou’s Chile-Lime Crackers

Yields 25 to 30 crackers


  • 2 cups grated reduced-fat Monterey Jack cheese
  • 1 ½ cups almond flour
  • 3 tablespoons cold water
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon minced garlic
  • ¼ teaspoon salt
  • 1/8 teaspoon turmeric powder
  • ½  teaspoon chili powder
  • ¼ teaspoon lime zest
  • 2 teaspoons lime juice 


  1. Preheat the oven to 350 F.
  2. Grease a baking tray. Mix the ingredients together in a bowl. Form into a ball and refrigerate until firm, about 15 minutes.
  3. Drop small rounds of the dough, well spaced apart, onto the baking tray. Press the dough rounds and flatten onto the tray. Place in the oven, and bake for approximately 15 minutes, or until the crackers turn golden brown.  Allow to cool.
