Olive Sandwich Bread

Yields 20 to 25 slices

Ingredients :

• 3 eggs
• ½ cup finely chopped shallots
• 10 kalamata olives, pitted and finely chopped
• 7 ½ ounces dry curd cottage cheese (farmer’s cheese)
• 2 tablespoons extra virgin olive oil
• 3 tablespoons grated parmesan cheese
• ½ teaspoon salt
• ½ teaspoon baking soda
• ¼ teaspoon thyme
• ½ cup SCD yogurt or plain, nonfat or low fat Greek yogurt
• 3 cups almond flour

Directions:
  1. Preheat the oven to 350 F.
  2. Blend together all the ingredients in a food processor until well mixed, 3 to 5 minutes.
  3. Pour into a greased 9 by 13 inch baking dish.
  4. Bake in the oven until a knife inserted into the center comes out clean, 30 to 45 minutes.
Recommendation:

Watch the oven carefully; the bread might cook faster than the intended time; check after 20 minutes.
