Veggie Smoothie

Serves 1-2. 

  • ½ cup cold water
  • ½ red bell pepper (or any color)
  • 1 medium carrot
  • 1 stalk celery
  • 1 ½ cup kale leaves
  • ½ apple
  • a thin slice of fresh or frozen ginger
  • 8 whole almonds
  • about 6 ice cubes
  • optional - a bit of frozen fruit – a few grapes, mango pieces, orange segments…

Mix all in blender, setting on “juice” if this is an option, or until well blended.

This is super-nutritious juice, with all these wonderful veggies!  The almonds provide good (monounsaturated) fats, which will help with absorption of fat-soluble vitamins. 

If you are out of any of the ingredients, experiment and substitute – spinach instead of kale, cucumber instead of celery, any kind of frozen fruit, for a bit of sweetness.
