Chia Seed Pudding

  • 1 cup unsweetened vanilla almond milk
  • 1 cup plain low-fat Greek yogurt
  • 2 tablespoons honey – local is best
  • 1 teaspoon pure vanilla extract
  • A dash of Kosher salt
  • ¼ cup chia seeds
  • For a little something extra, puree mangos or peaches for topping.

Stir all ingredients well and cover in an airtight container. Make sure chia seeds are evenly distributed. Refrigerate overnight.
