Asian Cucumber Salad

Serves 4


  • 1 tablespoon rice-wine vinegar
  • 1/4 teaspoon honey
  • Cayenne pepper to taste
  • Salt & freshly ground pepper to taste
  • 1 English cucumber, peeled and cut crosswise into 1/4-inch slices
  • 1⁄4 Red onion, thinly sliced
  • 1 Carrot, thinly sliced


  1. Whisk together vinegar, honey and a pinch of cayenne pepper.
  2. Season with salt and pepper.
  3. Add cucumber, purple onion and carrots and toss to coat.
  4. Chill until ready to serve.
