Spinach and Orange Salad

• 2 cups fresh spinach 
• 1 fresh orange or tangerine, seeded and sectioned OR 1 can mandarin orange sections (reserve juice) 
• ½ cup feta cheese cut into small chunks (optional) 

Combine above in salad bowl and prepare dressing: 

• 2 tbs juice from canned oranges OR 2 tbs orange juice 
• 1 tsp. lemon juice 
• 1 tbs olive oil 
• ¼ tsp. garlic powder 
• ½ tsp. dried mustard 
• 1 tbs honey 

Whisk together until well blended and pour over salad. 

Makes 2 servings.
