Diabetic Recipe: Salmon Patties

Makes 4 servings 

Ingredients  

  • 4 boneless, skinless salmon fillets (about 20 oz total) cut into chunks
  • 2 tbsp Thai red curry paste
  • Fresh root ginger, grated, thumb-sized
  • 1 tsp soy sauce
  • 1 bunch coriander, half chopped, half leaves picked
  • 1 small cucumber (or half large) 
  • 1 tsp vegetable oil
  • 2 carrots
  • 2 tbsp white wine vinegar
  • 1 tsp sweetener

Instructions

1. Add salmon into a food processor with the curry paste, ginger, soy and chopped coriander. Pulse until roughly minced.

2. Shape the mix into four patties. Heat oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.

3. Meanwhile, peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sweetener until the sweetener has dissolved, then toss through the coriander leaves.

4. Divide the salad between four plates and serve with the patties.
