Quinoa Pudding

1 cup quinoa 
1 1/2 cups apple juice 
1 cup raisins 
1 cup chopped walnuts 
Juice of 1 lemon 
Cinnamon to taste 
2 tsp. vanilla extract 

1. Place quinoa in a sieve and wash it well under cold running water. Drain. Place in frying pan and dry roast until gives off an aromatic, corny smell. Remove from heat. 
2. Place quinoa in pot with 2 cups water. Bring to a boil, cover, lower heat and boil gently until all water is absorbed and quinoa is tender, about 15 minutes. 
3. Measure 2 cups of cooked quinoa and add it to the apple juice, raisins, nuts, lemon juice and pinches of cinnamon to taste. Simmer, cover for 15 minutes. Remove from heat and stir in vanilla extract. 

If it is not thick enough, add arrowroot or cornstarch until desired consistency is reached. 

Serve warm or chilled, plain or with berries or sliced banana, or a little maple syrup if you want it sweeter.
