Lemon Zucchini Slices

1 lb. zucchini, cut diagonally in to ¼”-thick slices 
1 tsp. canola oil 
Fresh lemon juice to taste 

1. Preheat oven to 400’F. 
2. In large bowl toss zucchini slices in on layer in a shallow baking pan and bake in middle of oven 5 minutes. 
3. Turn slice and sprinkle with salt to taste. Bake slices 3-5 minutes more, or until just translucent and tender. 
4. Sprinkle zucchini with lemon juice.
