Barley Salad with Oregano and Cucumbers

1 Cup barley 
3 Cups water 
¼ Cup Chopped Fresh Oregano 
2 Green Onions, Chopped 
¼ Cup Olive Oil 
3 Tbs. Lemon juice 
1 Tbs. Lemon zest 
1 Cup Peeled, Chopped Cucumbers 
¼ Cup Toasted Almonds 
Pinch of Cayenne Pepper (optional) 
Salt and Pepper to taste 


1. In a medium saucepan, bring water to a boil and add barley. 
2. Simmer for about 30 minutes. 
3. Cool Barley to room temperature, fluffing with a fork occasionally 
4. In a medium bowl, combine the remaining ingredients. 
5. Add the cooked Barley 
6. Adjust salt and pepper
