1 tbs. arrowroot
2 tbs. cold water
½ cup water
2 tbs. fresh lemon juice
2 tbs. Dijon mustard
4 cups broccoli florets
1. Dissolve arrowroot in 2-tbs. water.
2. In saucepan, whisk together the ½ cup water, lemon juice, and Dijon mustard. Heat and add arrowroot mixture. Continue heating and stirring until sauce thickens.
3. Add more lemon juice if desired.
4. Blanch broccoli in boiling water or steam until done, then toss with lemon sauce.
Option: Honey Mustard Sauce
7 tbs. water
¼ cup Dijon mustard
7 tbs. honey
¼ tsp. freshly ground black pepper
To make sauce, mix water with mustard, honey, and pepper. Toss ½ cup of sauce with broccoli and serve.
