2 large cans diced tomatoes (no salt added)
½ tsp. salt
Extra virgin olive oil
3 cloves garlic, minced
½ tsp. fresh ginger, chopped
¼ cup onions, chopped
1 ½ tsp. ground coriander
1 ½ tsp. paprika
1 ½ tsp. ground cumin
3 cinnamon sticks
3 bay leaves
1. Sauté onions and garlic in olive oil until onions are translucent. Add
spices and sauté to coat onions.
2. Add tomatoes, mix well and simmer on med to low heat until
thoroughly heated and flavors are melded.
Makes 4 servings.
