Serves 6 (2 pancakes per serving)
1 cup whole wheat flour
¾ cup unbleached white flour
2 tbs. wheat germ
1 tbs. sugar
2 tsp. Baking powder
1 tsp. ground cinnamon
1 cup soy milk
1 tsp. freshly grated orange zest
¾ cup orange juice (2 medium oranges)
Egg substitute equivalent to 1 egg
Mix flours, wheat germ, sugar, cinnamon, and orange zest in a mixing bowl. In another bowl mix together soy milk, orange juice, and eggs. Pour wet ingredient into dry and mix well (do not overmix).
Spray a skillet with nonstick cooking spray and cook pancakes until done. Serve with fresh orange wedges and syrup.
