Cinnamon Apple Muffins

o 2 cups blanched almond flour
o ½ teaspoon salt
o ½ teaspoon baking soda
o ¼ cup arrowroot powder
o 1 teaspoon ground cinnamon
o ¼ cup grapeseed oil
o ½ cup honey
o 1 large egg
o 1 tablespoon vanilla extract
o 2 medium apples, peeled, cored, and diced into ¼ inch cubes

o Preheat oven to 350 F. Line10 muffin cups with paper liners.
o In a large bowl, combine the almond flour, salt, baking soda, arrowroot powder, and cinnamon.
o In a medium bowl, whisk together the grapeseed oil, honey, egg, and vanilla extract.
o Stir the wet ingredients into the almond flour mixture until thoroughly combined, then fold in the apples
o Spoon the batter into the prepared muffin cups.
o Bake for 25-30 minutes, until the muffin tops are golden brown and a toothpick inserted in the center comes out clean.
o Let the muffins cool in the pan for 30 minutes, then serve.
